Shrimp Pesto Salad

Here’s a quick and tasty snack! Makes for a good appetizer as well if you wanted to serve it on some small baguette slices. Dress it up with chopped flat leaf parsley or chives. It’s super easy to make also, which is my motto here!

Ingredients
12 Medium Shrimp (Peeled, Deveined, Cooked and Chilled)
2-3 Tbsp Pesto
2-3 Tbsp Mayonnaise
Fresh Bread for Serving

One of the things I love about my local market is they have a sauce, dressing and olive bar where their chefs make fresh pesto and I can buy in the exact amount I need. Not every store has this though, I know, but you can find containers of pesto in the gourmet cheese or pasta bin at mainstream grocery stores. Do not attempt to make pesto from a dry mix. It’s nothing like real pesto imo.

Chop up the shrimp and mix it all together with the pesto and mayonnaise. Spread the mixture on toasted wedges of bread as a side to salad or soup. Yep, that easy! Also, if you have leftover pesto, try it tossed with some pasta (such as linguini) and peas or broccoli for a dinner idea. Add chicken or shrimp in for some protein. Yum!
